We are Alluyon Coffee, a roastery based in the highlands of the Philippines, the Cordilleras. Because of the elevation of our mountains, the coffee grown has a diverse flavor profile, and our goal is to share these beans with you. Beyond that, we want the voices of the local farmers that we collaborate with to come forth through the coffee beans we share with you!
Alluyon is a Kankana-ey term used to describe bayanihan, or the communal effort to accomplish tasks like farming, harvesting, and planting. In our efforts to bring you delicious local specialty coffee, we work hand-in-hand with farmers by giving back 40% of sales to the community. We uphold the belief that they deserve recognition and pay equal to the effort they exert to provide us the beans we enjoy.
Our social enterprise also has a holistic approach to coffee that is imbued with sustainability and Cordilleran values. These are (1) authentic goodness, (2) reverence and love for local coffee and culture, and (3) mutualism and collaboration for the cup of coffee you drink.
In line with that, stewardship is at the heart of what we do because here at Alluyon Coffee, we and the farmers want to give back to the land that gives so generously. A significant part of good stewardship is striving towards minimal to zero waste. This effort is reflected in our Cascara Tea, which is made of coffee husks refurbished from the beans. These are carefully dried and turned into tea–minimizing food waste and serving as additional income to the farmers as well.
From the root, fruit, seed, and bean, generations of indigenous Cordilleran farmers have cultivated the coffee beans you drink early in the morning, afternoon or evening. In that sense, we are all a part of Alluyon.
As a social enterprise and roastery, the beans we roast are sourced directly from the farmers. We collaborate with organisations such as AGOMAC for Atok coffee beans, Kapi Tako for La Trinidad coffee beans, and MOFSAI for Tuba coffee beans to give you a taste of the mountains.
Each of these cooperatives is a group of people from different walks of life coming together to get their coffee out to the world. Like we said, coffee rearing is a way of the farmers, and we want to share that with you.
Cordillera is a melting pot of culture and life, and we want to bring that same culture to your homes. Hence, Alluyon Coffee wants to bridge that gap by not only getting you your caffeine fix but also doing so in a socially and ethically conscious way.
Our goal is simple: We want to give you a peek at the cultural, scientific, and social aspects of coffee agriculture that you don't often see. Through the screen, we hope to give you a better grasp of Cordillera's beauty and life through the communal drink that we all enjoy–coffee.
